It seems that, over the years, Cally Johnson and Kathryn Mathis have been on a journey to find each other. Though neither is from Oklahoma City originally, each has made her own lasting impact on its culinary scene. Add local restaurant impresario Chris Lower to the mix and success is inevitable.
Johnson, a late-comer to the restaurant industry, first met Lower in the kitchen of Deep Fork Grill, in 2000. She began as a cook, but quickly rose to the rank of executive chef. From there she went on to take over the kitchen of Boulevard Steakhouse and followed that with a brief stint at Cheever’s Cafe.
Mathis got hooked on restaurants a bit earlier in life - what started as a summer job quickly became a passion and then a career. She first worked with Lower at Montrachet, in Tulsa in the early 90s, before decamping to Austin, TX. She made her mark on the Austin scene, heading up the kitchens of Mezzaluna and the Bitter End, before becoming a personal chef who catered to some of Austin’s elite.
In addition to the supporting role he played in the careers of Johnson and Mathis, Lower boasts a full restaurant resume of his own. He opened his first restaurant, the Roosevelt Grill, in Edmond in 1980. From there, he, along with local chef Kurt Fleischfresser, went on to open the Coach House and the Metro Bar and Bistro, introducing fine dining to Oklahoma City. He’s also had a hand in such local favorites as the Iguana Lounge, the Museum Café, Earl’s Rib Palace and Irma’s Burger Shack, to name just a few.
Mathis and Johnson became fast friends when Mathis was invited by Fleischfresser to cook a private, multi course dinner at the Coach House, for Women’s Night Out. Johnson, along with several other notable, local, female chefs, was a part of the crew that executed this dinner to rave reviews. After years of working for, with and beside the same folks but never meeting, they pair could finally answer yes to the question “Do you two know each other?”
In the months leading up to the July 2009 opening, the trio planned, plotted, renovated and took a road trip, to southern California, to pick up the eponymous Truck. All that, and more, was documented on their Facebook page, creating a buzz around Oklahoma City’s newest hot spot, well before it was open to the public. When they finally opened for business, that hot day in late July it was to a packed house and rave reviews.
